Making a conscious effort to eat well this week. I’ve been European grocery store shopping, which means I’ve been to the grocery store every day this week; and not intentionally, time constraints and forgetfullness are my excuses. Rachel asked me tonight why I’ve been cooking such nice dinners (implying that I normally don’t?!). So here are my marathon week dinners:
Monday - Garlicky Spinach-Sausage Gratin and Amy's Cream of Tomato Soup (Yeah, I cheated and the soup came of out of can.)
Tuesday - Spinach, Pasta & Pea Soup and grilled cheese sandwiches
Wednesday - Beef Tenderloin with Cherry-Black Pepper Sauce and Roasted Sweet Potato Salad with Chipotle-Cranberry Dressing
Thursday - Blue Cheese-Stuffed Pork Chops with Pears and Lemon-Parmesan Broccoli
Friday - Spaghetti with Tomatoes, Basil, Olives & Fresh Mozzarella and a salad
Saturday - Pre-race dinner at Tavern on the Green!
3 days and 12 hours to go until the ING NYC Marathon! Yay!
